Today I tried a couple of recipes, that I have been wanting to try for a long time.
Glutenfree pancakes
1/2 liter soy or rice milk
350 grams flour (made out of riceflour, buckwheat, millet or quinoa flour) you can mix all of the flours, at least two together.
4 eggs
1/2 tsp salt
150 grams of shredded squash. (you can replace this with any other veggie you might like)
Stir the flour into the milk
Stir in the eggs, one by one
Add the squash
Bake the pancakes in a pan using a small amount of cocoanutoil
They are really good...
I imagine that you can use the recipe and add sugar to make them sweeter, leave out the squash and add bananas :)
I didnt think it was possible to make a good tasting glutenfree whitebread, but it is!
450 gram/16oz White bread flour ( glutenfree)
1/2 tsp salt
2 tsp Ouick yeast
2 tbsp Sugar
325 ml warm milk
2 Eggs
1 tsp vinegar ( I left this out)
6 tbsp Oil ( I used Olive oil)
1. Mix together the flour, salt, yeast and sugar
2. In a large bowl beat in the milk, vinegar and eggs
3. Add the flour and mix to a form sticky dough
4. Continue mixing adding the oil
5. Place the dough in a oiled 1 kg/2pounds bread tin, cover and leave to rise for 1 hour
6. Bake in a preheated owen for 40-45 mins
